Some straw and leaf particles on the mushroom in the
package are common because mushrooms are harvested directly into the container
in which they are sold. Remove any clinging particles
with a damp cloth or soft brush and rinse quickly and pat dry with a paper
towel. Never soak. Fresh oyster mushrooms are like little sponges and will
absorb water. To retain their natural moisture, refrigerate immediately in a porous (brown) paper bag, cardboard box or store covered with a damp paper towel or cloth. If stored properly, they can
be kept for up to 7 to 14 days after the date of purchase. Store in a freezer after briefly sautéing in butter. Oyster mushrooms dehydrate rapidly. When used dry, they can be added to a dish without rehydration.
